One-page dashboard: startup cost, loan requested, owner equity %, Year 1 and Year 3 revenue and net income, DSCR, cash break-even vs planned covers, lowest cash month, red flags, and three charts.
- 3
Financial model: Assumptions
Every input in one place: scenario (Base, Conservative, Strong), four service types with covers per day, average ticket, site fee % and flat fee, crew and hours; operating days by month; seasonality; ramp-up for a new truck; growth; food and packaging %; card fees; wages; fuel, generator and propane per day; fixed costs; owner salary and draws. A window-capacity check flags covers you cannot serve.

36 months of service days x covers per day x average ticket for each service type, with annual totals. The cost engine shows every cost line by month so a lender or accountant can audit it.

Business Plan Template
Cover, how-to page, then 12 sections and an appendix: executive summary, company overview, concept and menu with a plate cost worksheet, market analysis with where to find each statistic, location and service strategy (commissary, lunch stops, breweries, events, catering, seasonal calendar), competition and SWOT, operations with a permits table, staffing, marketing, risks with a stress test, financial plan, funding request, glossary. Blue guidance boxes use one paragraph style so Word can select and delete them together.
- 10
Sample Business Plan: Comal Street Tacos
The same 12 sections fully written for a fictional taco truck. Every financial figure comes from the workbook's sample data, including the Conservative-scenario stress test and the owners' written response. Market statistics are left as placeholders with sources, on purpose.
- 11
Permits & Launch Checklist
Business setup, health, fire and vehicle, insurance, where you park and sell, employees, phrased as questions to ask your city and county; a 120-day launch countdown; documents to keep in the truck.
- 12
Location & Event Scorecard
Stop scouting log with foot-traffic counts, questions to ask an event organizer, an event break-even check with a worked example, and a results log for each stop.
What you can count on
- Revenue built the way a lender checks it: service days x covers per day x average ticket, for each of four service types, month by month for 3 years
- Seasonality by calendar month and a ramp-up for the first six months of a new truck
- Event fees as a % of sales plus a flat fee per day, brewery percentages and card fees all modeled
- Debt service coverage ratio (DSCR) for each year, flagged red under 1.25x
- Break-even in covers per service day, with and without loan payments
- Base, Conservative and Strong scenarios from one dropdown
- Balance sheet that balances, with a check cell that must read zero
- A finished sample plan whose numbers match the workbook's sample data
- No invented statistics: the template says where to find each market number
- Formulas only, nothing hidden or locked; the helper cost sheet is visible and labeled

Before you buy
Does the financial model work in Google Sheets?
Yes. Open Google Sheets, File > Import > Upload the .xlsx. Every formula uses functions Google Sheets supports (SUMIFS, INDEX, MATCH, PMT and similar), and there are no macros. The Word files open in Google Docs and Apple Pages.
My truck does not do brewery nights or catering. Can I change the service types?
Yes. The four service types are renamable rows on the Assumptions tab. Rename them (farmers markets, late night, school pickups), change the numbers, or clear a row's name and it counts as zero in every total.
Are the sample numbers industry averages?
No. The sample truck is fictional and its figures illustrate how the model works. Enter your own quotes, menu costs and expected covers. The plan template tells you where to find real market data for your area, such as Census QuickFacts, Census OnTheMap and your county health department.
Will a bank accept this plan?
It is built around what lenders ask for: sources and uses, owner equity, monthly and annual projections, cash flow, a balance sheet, break-even and debt service coverage. Each lender has its own requirements and forms, so ask yours early. This is a planning template, not legal, tax or lending advice; have an accountant review your projections.
Does it list the permits I need?
It lists the permits, inspections and insurance most food trucks deal with, phrased as questions to ask. Requirements, names and fees differ by state, county and city, so confirm each one with your local health department, fire marshal and licensing office.
How do I get the files?
Instantly after payment: a download page opens and the link is also emailed to you. The ZIP holds the Excel workbook, the Word documents, a PDF of each and a Start Here guide.
What if it is not what I need?
